I love mug cakes. This Keto Mug Cake uses coconut flour, of course. I noticed that other mug cake recipes only make a cake that fills half of a coffee mug, so I made sure this recipe fills the whole cup!

For me, it’s the perfect serving size and satisfies my craving for cake every time.

Also, this coconut flour mug cake is light in texture. It’s not dense. The coconut oil keeps it moist. I hope you love it.

Mug cakes are perfect for when you’re wanting a little cake but don’t actually want to bake a whole cake.

This one whips up in about 5 minutes from start to finish!

How to make keto mug cake

Start by gathering your ingredients. More specifically, you’ll need:

  • 2 eggs
  • 3 tablespoons coconut oil, plus extra for greasing mug
  • 2 tablespoons erythritol
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons coconut flour
  • 1/2 teaspoon baking powder
  • dash of sea salt

I found it easier to add the ingredients to a bowl and whisk them together inside of trying to do it all in a coffee mug.

After you whisk them together, then pour the mixture into your greased coffee mug and microwave.

I have used bowls instead of coffee mugs many times to bake my mug cake in the microwave, and it works out great each time.

Then I have fun with the frosting. I like to use a frosting I can make up quickly, so my go-to choice is whipped cream, but my coconut cream frosting is a great choice too! Sometimes I drizzle melted chocolate or caramel over the whipped cream. This coconut flour mug cake with whipped cream is so yummy!

Ingredients

  • 2 eggs
  • 3 tablespoons coconut oil, plus extra for greasing mug
  • 2 tablespoons erythritol
  • 1/2 teaspoon vanilla extract

Instructions

  1. First, start by taking a dab of coconut oil or olive oil and coating the inside of a microwave-safe mug.
  2. In a small bowl, add all of the ingredients.
  3. Whisk together the batter until combined. It’s ok if the eggs have made some of the coconut oil hard.
  4. Pour the cake batter into the coffee mug. Use a spoon to level the batter so it is smooth.
  5. Place the unbaked mug cake into the microwave and microwave for 2 ½ minutes. Then check on the mug cake and continue baking in 30-second intervals until baked. It took 3 minutes in my microwave.
  6. Once baked, eat right away or top with frosting.

Notes

Note: The coffee mug will be hot when finished baking, so I recommend using oven mitts to remove it from the microwave.

How can I make this recipe egg-free?

This recipe uses eggs in the batter. I have never tested an egg-free version of this recipe. You can try replacing the eggs with a “chia egg”, bananas, applesauce, or whatever you usually use in place of eggs. An egg-free mug cake will be denser.

How to make an egg substitute:

1 tbsp of chia seeds + 2.5 tbsp of water = 1 large egg.

1/4 cup ripe mashed banana replaces 1 large egg

1/4 cup of applesauce replaces 1 large egg

Can I use olive oil instead of coconut oil?

You can use olive oil instead of coconut oil to make your mug cake. I tested using olive oil and I found it took 4 minutes instead of 3 minutes to bake. The mug cake will have a slightly different taste because of the olive oil.

How can I bake these mug cakes instead of microwaving them?

Yes! Instead of a mug, pour the batter into a 12 ounce ramekin, or 2-6 ounce ramekin bowls. Bake at 350 degrees F for 15 minutes.

Can I use a bowl instead of a coffee mug to microwave these in?

Yes, you can use a microwave-safe bowl or ramekins instead of a coffee cup to microwave these in. The cooking time might be different so microwave for 2 ½ minutes and then check the batter and then do 30-second intervals.

What kind of frosting can I put on a mug cake?

You can use any frosting you like on a mug cake. I prefer to use a frosting that can be made quickly. I suggest using:

  • whipped cream
  • chocolate chips + a dash of coconut oil or butter, melt it and stir
  • Peanut butter, almond butter, cashew butter, etc.
  • Peanut butter + chocolate chips, melt it and stir
  • Softened cream cheese + sweetener + vanilla, combine
  • Sweetener + cinnamon, for a cinnamon sugar topping that tastes like a donut
  • Jam

What can I add to the batter to make it better?

You can have fun adding things like chocolate chips, sprinkles, swirling jam into the batter, apple pie spice, lemon extract, etc.

How can I make this paleo-friendly?

You can easily make this keto mug cake paleo-friendly by using your favorite paleo sweetener instead of a keto sweetener. Raw honey, maple syrup, coconut palm sugar, or organic cane sugar would all be great options for this recipe.

Can I substitute almond flour for coconut flour?

The coconut flour in this recipe cannot be replaced with almond flour. This recipe uses more eggs because it is made with coconut flour so you would need to adjust the eggs, coconut oil, and coconut flour when switching to almond flour. When you see a coconut flour-based recipe don’t be alarmed when the amount of coconut flour seems too low and DON’T be tempted to add more coconut flour unless you are used to baking with this special flour. If you do add more coconut flour, add 1 tsp at a time.

I’m allergic to nuts. Is coconut a nut allergy?

If you are allergic to nuts it makes sense to wonder if you can eat anything made with coconuts. Coconut is not a botanical nut; it is classified as a fruit. If you are allergic to tree nuts, please talk to your allergist/doctor before adding coconut to your diet.

How do I store this mug cake?

You can store this keto mug cake in an airtight container in your refrigerator for up to 7 days or in your freezer for up to 3 months. I do not recommend storing these mug cakes at room temperature because I find coconut flour baked goods go bad quickly.
