Warning: the ingredients found in my fat bombs may vary from other keto fat bomb recipes. While most fat bomb recipes boast of no added sugars, I take low carb recipes one step further and skip artificial sweeteners too. More on that in a minute.

The base ingredients for this recipe include chopped almonds, butter, and heavy cream.

Do your best to seek out the highest quality ingredients you can find. For example, using grass-fed butter will provide more nutrients in fat bomb recipes than conventional butter. Also look for raw almonds that are not made with highly processed vegetable oils like sunflower, safflower, or canola oils.

While I don’t use keto-friendly sweeteners to sweeten fat bombs, I sometimes use a small amount of natural sweeteners. This recipe calls for small amounts of blackstrap molasses and dark chocolate. A touch of maple extract also adds to the delicious flavor of this maple fat bomb recipe.

A Few Notes About Keto-Friendly Sweeteners

Too many keto diet recipes are filled with sweeteners, or use a sugar alcohol to sweeten keto dessert recipes. Adding too many keto friendly sweeteners to popular desserts can cause cravings for many keto dieters. Too many sweeteners may even lead to a weight loss stall.

While I don’t believe you can never have sweet foods again, I’m a big believer in weaning off too many overly sweetened foods. This has made a huge difference for our Keto Decoded members. Many use this tip to lose up to 80 pounds in under a year after no other diet worked.

This recipe in particular uses blackstrap molasses to add sweetness to the recipe. This should be OK for most keto dieters since you only use 1 teaspoon spread over 15 fat bombs. This equates to less than 1/3 grams of net carbs from the blackstrap molasses per fat bomb.

Once you wean your palate off of too many overly sweetened foods filled with “natural sweeteners” that are manufactured in a science lab, the taste of maple combined with dark chocolate in this recipe will be sweet enough for most people.

How to Make Maple Almond Bites

First thing, set heavy cream out on the counter to allow it to come to room temperature. This will help avoid any curdling that sometimes occurs when mixing cold heavy cream with a warm liquid.

Then melt the butter in a saucepan over medium heat. Once melted, add in the room temp. heavy cream.

Whisk the fats together. Then turn down the heat to a simmer, and whisk in the maple extract and blackstrap molasses.

Stir on occasion as the mixture thickens. Once it has a caramel like texture, remove from heat. This should take approximately 5 minutes.

While the mixture thickens, chop the almonds.

While I previously used the back of a measuring cup for this task, a nut chopper makes food prep easier. Taking up a little storage space in the kitchen is worth the elbow grease I save.

You can also line a mini muffin pan with mini muffin liners while you wait. Alternatively, you can line a baking sheet with parchment paper for this delicious fat bomb recipe. Just scoop the finished product into small balls with a tablespoon. A silicone mold works too.

Once the mixture thickens, pour the chopped almonds directly into the saucepan. Combine well with a whisk.

Then spoon the almond mixture into the lined mini-muffin tin in 1 tablespoon increments. Place in the freezer for 5 minutes.

While you wait for the fat bombs to firm, melt the dark chocolate in a small saucepan over low-medium heat. Then remove the fat bombs from the freezer. Drizzle the melted chocolate over the fat bombs. Place in the freezer for another 15 – 20 minutes.

Store maple almond bites in an airtight container in the freezer or fridge. These go pretty quickly in my house, so I store them in a Ziploc bag in the fridge.

If it takes you longer to go through a batch, then store in the freezer. Remove a few at a time as you’re ready to devour them.

  • 1 cup almonds, chopped
  • 3 tbsp butter

  • Place in freezer for 5 minutes.
  • Melt dark chocolate over low-medium heat.
  • Remove almond bites from freezer and drizzle chocolate on top.
  • Place in fridge or freezer until firm. Store in fridge.
